Coconut Peanut Butter Protein Balls

  Coconut + Peanut Butter = Yum!

 Coconut + Peanut Butter +Healthy = Even Better!!!

  These little treats are one of my favorites I’ve come up with through trial and error.

 Ingredients:

 

  • 1 1/2 cups Unsweetened coconut flakes
  • 1/3 cup Peanut butter (or other nut butter)
  • 1/3 cup Unflavered protein powder
  • 10 Medjool dates (pitted)
  • 1 tsp Lemon juice

 Did you know that dates are low on the glycemic scale and full of vitamins and minerals? They are a great substitution to simple sugar.

 Grind the coconut flakes in the food processor to a grainy paste. Or if you prefer, you can buy desiccated coconut from Indian grocery stores. If using desiccated coconut, reduce the amount of coconut to about 3/4 cup. Run the dates and lemon juice together in the food processor until they are a mushy mass.

 

Mix all ingredients in a bowl until they come together. I usually start out with a spoon, then resort to hands. Section out and roll into balls. This recipe makes about at dozen. 

 

That’s it for the basic recipe. Pretty simple, huh? Now you can have fun adding whatever other stuff you want to make it interesting. Hmm, like:

  • Chocolate chips
  • Dried cranberries
  • Nuts
  • Spices like cinnamon, nutmeg, ginger, etc
  • Vanilla or other extracts…

 

These make a great snack on the go or to started in the morning. The healthy fats and protein will keep you fueled and full and the dates will keep you from a sugar crash too.

These can be refrigerated, but mine never last that long…

    I know from experience that these are yummy. I bet they would especially rock with some dark chocolate.
